A shrimp and green peas pie is a savory and flavorful dish that combines tender shrimp with sweet green peas in a creamy sauce, all encased in a flaky pie crust. Here’s a recipe to make this delicious pie:
Ingredients
For the Crust:
- 1 ¼ cups all-purpose flour
- ½ teaspoon salt
- ½ cup unsalted butter, chilled and cubed
- 2-3 tablespoons ice water
For the Filling:
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup fresh or frozen green peas
- 1 pound (450g) shrimp, peeled and deveined, cut into bite-sized pieces
- 1 cup chicken or vegetable broth
- ½ cup heavy cream
- 2 tablespoons all-purpose flour
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and freshly ground black pepper, to taste
For the Topping (Optional):
- 1 egg, beaten (for egg wash)
Instructions
1. Prepare the Crust:
- In a large bowl, whisk together the flour and salt.
- Cut in the chilled butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
- Gradually add ice water, 1 tablespoon at a time, until the dough just starts to come together. Be careful not to overwork it.
- Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
2. Prepare the Filling:
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened and translucent, about 5 minutes.
- Add the garlic and cook for an additional 1 minute.
- Stir in the green peas and cook for 2-3 minutes, then add the shrimp and cook until they turn pink and are cooked through, about 3-4 minutes. Remove the shrimp and peas mixture from the skillet and set aside.
- In the same skillet, add 2 tablespoons of flour and cook for 1-2 minutes, stirring constantly, to form a roux.
- Gradually whisk in the chicken or vegetable broth and bring to a simmer. Cook for 2-3 minutes, until the mixture starts to thicken.
- Stir in the heavy cream, thyme, parsley, and season with salt and pepper. Cook for an additional 2-3 minutes until the sauce is thickened.
- Return the shrimp and peas mixture to the skillet and stir to coat with the sauce. Remove from heat and let it cool slightly.
3. Assemble the Pie:
- Preheat your oven to 375°F (190°C).
- Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie pan. Transfer the dough to the pan and trim the edges, leaving a slight overhang.
- Pour the shrimp and green peas filling into the prepared crust.
- If desired, roll out another disk of dough to create a top crust. Place it over the filling, trim and crimp the edges to seal, and cut a few slits in the top crust to allow steam to escape. Alternatively, you can make a lattice crust or simply top with a layer of pastry scraps.
- Brush the top crust with beaten egg if desired for a golden finish.
4. Bake:
- Place the pie on a baking sheet (to catch any drips) and bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
- Let the pie cool for about 10 minutes before serving to allow the filling to set.
