Ingredients

For the Crust:

  • 1 ¼ cups all-purpose flour
  • ½ teaspoon salt

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup fresh or frozen green peas
  • 1 pound (450g) shrimp, peeled and deveined, cut into bite-sized pieces
  • 1 cup chicken or vegetable broth
  • ½ cup heavy cream
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and freshly ground black pepper, to taste

For the Topping (Optional):

  • 1 egg, beaten (for egg wash)

Instructions

1. Prepare the Crust:

  1. In a large bowl, whisk together the flour and salt.
  2. Cut in the chilled butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
  3. Gradually add ice water, 1 tablespoon at a time, until the dough just starts to come together. Be careful not to overwork it.
  4. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

2. Prepare the Filling:

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened and translucent, about 5 minutes.
  2. Add the garlic and cook for an additional 1 minute.
  3. Stir in the green peas and cook for 2-3 minutes, then add the shrimp and cook until they turn pink and are cooked through, about 3-4 minutes. Remove the shrimp and peas mixture from the skillet and set aside.
  4. In the same skillet, add 2 tablespoons of flour and cook for 1-2 minutes, stirring constantly, to form a roux.
  5. Gradually whisk in the chicken or vegetable broth and bring to a simmer. Cook for 2-3 minutes, until the mixture starts to thicken.

  3. Pour the shrimp and green peas filling into the prepared crust.
  4. If desired, roll out another disk of dough to create a top crust. Place it over the filling, trim and crimp the edges to seal, and cut a few slits in the top crust to allow steam to escape. Alternatively, you can make a lattice crust or simply top with a layer of pastry scraps.
  5. Brush the top crust with beaten egg if desired for a golden finish.

4. Bake:

  1. Place the pie on a baking sheet (to catch any drips) and bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
  2. Let the pie cool for about 10 minutes before serving to allow the filling to set.
