Ingredients:
For the meringue:
4 whites
200 g sugar
1 tsp cornstarch
1 tsp white vinegar
1 tsp vanilla extract
For the cream:
300 ml cream 33%
50 g icing sugar
1 tsp vanilla extract
For decoration:
Fresh berries (strawberries, raspberries, blueberries)
Preparation:
Beat the whites to soft peaks, gradually adding the sugar until you get a glossy mixture.
Add the starch, vinegar and vanilla extract and mix gently.
Place the mixture in a circle on a baking tray lined with baking parchment and bake at 120°C for 90 minutes. Leave to cool in the oven with the door ajar.
Whisk the cream with the icing sugar and vanilla extract to stiff peaks.
Spread the cream over the meringue and garnish with fresh berries.
Serve immediately to keep the meringue crisp.
